Caroline Gregory, owner of The Lovat Hotel and Restaurant, will join the speaker line-up for the Hotel Owner Conference on 3rd November 2026 at Prince Philip House, London.
Gregory, who operates the Fort Augustus-based property alongside her husband and head chef, Sean Kelly, will bring a distinct independent operator’s perspective to the inaugural summit. The Lovat is the area’s only 4-star, 3 AA Rosette hotel and has carved out a reputation for pairing warm Highland hospitality with a deep commitment to environmental responsibility.
Recognising that the property bypassed traditional definitions of luxury, Gregory and Kelly pioneered their own hospitality concept: “coftie” – a blend of cosy, comfy, and coorie. The philosophy defines a uniquely Highland guest experience that combines outdoor adventure and comfort with thoughtful dining and genuine care.
Gregory is also widely recognised for her leadership in hospitality sustainability. Under her direction, The Lovat has implemented wide-ranging environmental initiatives, from local biodiversity projects and community eco-work to aggressive landfill reduction strategies.
These efforts have earned the property numerous accolades, including the prestigious Catey Sustainable Hotel Award and a spot in the Good Hotel Guide’s Top 10 UK Hotels.
