Ritz-Carlton Langkawi to host London chef Abby Lee in October

The Ritz-Carlton Langkawi has announced it will host Abby Lee, founder and chef patron of London restaurant Mambow, for a two-day culinary event on 2 and 3 October.

Lee, whose East London restaurant has been recognised with a Michelin Bib Gourmand, will present two menus at the resort’s Langkawi Kitchen. The dishes will combine Mambow favourites with local influences and ingredients sourced from the island.

The dinner menu is expected to feature Peranakan, or Nyonya, specialities such as otak otak prawn toast with pickled chilli, Sarawak-style sea bass ceviche with starfruit granita, and a fish head curry. A sambal inspired by a Langkawi variation using toasted coconut and boiled mackerel will also be included.

Guests will also be offered an afternoon tea at the resort’s Beach Grill, with a selection of sweet and savoury kuih – traditional Malaysian cakes – including pulut panggang with dried shrimp sambal, chicken lor bak, sardine curry puffs and cassava cake.

Lee has additionally created a version of Mambow’s signature sandwich, reworking the club sandwich as a Hainanese chicken sando made with pandan bread. It will be available at the resort until the end of the year.

Born to Malaysian parents from Penang and Sarawak, Lee grew up in Singapore and London. She is noted for her regional approach to Malaysian cooking, drawing on family recipes and Peranakan culinary traditions, which developed from Chinese traders who settled in Southeast Asia and intermarried with local communities.

The Ritz-Carlton Langkawi is located on the island’s south-west coast, within a 10-million-year-old rainforest overlooking the Andaman Sea.
