The Two-Michelin-starred Alex Dilling at Hotel Café Royal has appointed Sean Cooper as general manager.
Cooper joins the restaurant with over a decade of experience. He most recently held leadership positions at Heston Blumenthal’s Three-Michelin-starred The Fat Duck and Canal at Mason and Fifth.
His career includes serving as the opening general manager for Muse by Tom Aikens, where he established the service standards and operational systems from launch.
Cooper also oversaw the 2019 opening of Siren at The Goring, the hotel’s first new restaurant in a century, working alongside chef Nathan Outlaw.
Earlier in his career, Cooper spent several years at The Ledbury as senior sommelier and worked as assistant general manager at The Clove Club.
In his new role at Alex Dilling, he will be responsible for operational precision and maintaining the service standards of the Two-Michelin-starred dining room.
Located on the first floor of the Hotel Café Royal, the restaurant focuses on contemporary French gastronomic cuisine.
Cooper succeeds the previous management team to lead the front-of-house staff and oversee the guest experience for the intimate 34-seat venue.
Cooper said: “I am excited to bring my experience, energy, and vision to the restaurant’s next chapter. I remain committed to delivering operational excellence and creating exceptional guest experiences.”
