Coworth Park, the countryside hotel near Ascot owned by the Dorchester Collection, has opened a seasonal open-air restaurant called Tide, offering a British summer-inspired menu.
Situated on the upper terrace of the Mansion House, Tide serves dishes featuring produce from across the UK, including Cornish day-boat fish, Kentish strawberries, and herbs from Coworth Park’s kitchen garden. The menu has been devised by executive chef Adam Smith.
Signature dishes include grilled scallops with buttermilk and hot sauce, native lobster paccheri with black truffle and aged parmesan, and a panzanella salad with Isle of Wight tomatoes and grilled prawns. Desserts include Kentish strawberries with yuzu posset and a summer pudding with elderflower cream.
The drinks menu has been created in partnership with Sussex-based sparkling wine producer Rathfinny and features vintage rosés, botanical cocktails and non-alcoholic options.
Tide is open for reservations from 12–5pm, Friday to Sunday, throughout July and August.
Adam Smith, executive chef of Coworth Park, said: “Tide is all about capturing a moment in time, the height of the British summer. It’s a chance to celebrate the season’s finest ingredients, cooked simply and enjoyed in one of the most beautiful spots on the estate.”
